In 1871 Scottish scientist James Clerk Maxwell proposed a thought experiment, that involved a hypothetical creature acting as a gatekeeper between two compartments to sort gas molecules according to their speed. At first glance, such a system could potentially create energy from nothing… theoretically impossible given the laws of physics. This hypothetical gatekeeper became known to physicists as Maxwell’s Little Demon and has stirred debate in the science community for more than a century. Made with 86% Cabernet Sauvignon, and 14% Merlot. Produced for the last 3 decades from our limestone hillside, our Little Demon Cabernet Merlot blend is a melting pot of bright juicy blackberries, plums and dried herbs. The blend is well balanced with soft mouth-filling tannins. Classically found in the South-West of France in the region of Bordeaux where Cabernet Sauvignon & Merlot varieties are native, the so-called 'Bordeaux blend' of now spread across the world, including to McLaren Vale.

Tasting Notes
Has an aromas of raspberry, chocolate & dried herbs. The palate shows plum, blackberry, and cherries. It has well-balanced tannins and subtle vanilla oak create a soft round body, and a lasting finish.

Maxwell Little Demon Cabernet Merlot is best enjoyed with slow-cooked beef short rib.
