Sablet (Sable = sand) was elevated to Côtes du Rhône Villages with geographic name status in 1974. The earliest evidence of human habitation here dates back to Roman times. Winegrowing was introduced by the Counts of Toulouse and continued to grow from strength to strength during the reign of the Avignon Popes in the 14th century. Growth progressed until the 19th century, when the vineyards were decimated by phylloxera. By complete coincidence, a Sablet inhabitant invented the grafting machine that led to its revival. This wine is a blend of 60% Grenache, 35% Syrah and 5% Mourvèdre, all hand-harvested, crushed and traditionally macerated. After fermentation in traditional concrete vats, the wine is bottled to capture the essence of the terroir.

Tasting Notes
A medium-to-full bodied wine that displays ripened, warm fruit notes of blackberries & raspberries, and sweet spices layered with thyme & rosemary. Silky yet grippy, juicy tannins on the palate, bursting with supple black fruits flavor, while showcasing firm structure, balance and a lasting finishing.
Best Paired With
Pairs well with juicy pink lamb or succulent duck, an aubergine and tomato gratin or simply with a well matured hard cheese.
