The Domaine was created in 1850 by the Jessiaume family. Between 2006 and 2020, the Domaine is owned by a Scottish businessman, Sir David Murray. After generations of Jessiaume making the wines, a new team has arrived in 2014 and the Domaine changed its direction. The wines are hand crafted with minimal intervention. In order to do that, new investments in equipment and renovating the winery took place immediately. Harvest and sorting are done by hand. Small elevators are used to fill the tanks. Vinification is done with natural yeasts and the extractions are gentle and controlled. The goal is to obtain elegant and fine wines which respect the terroir. After sorting in the vineyard and in the winery, the grapes are de-stemmed and then directly put in tank. Cold pre-fermentation maceration is performed for 5 days. The spontaneous fermentation then starts. The grapes will stay in tank for roughly 3 weeks during alcoholic fermentation. The wine is then put in oak barrels (no new oak) by gravity for 12 months. No fining is performed.

Tasting Notes
Slightly lighter ruby purple, with a fine fresh bouquet, very promising. Crisp, almost crunchy red strawberry fruit with good tannins and a fresh finish. Typical of the appellation and the vintage has just made the fruit a touch more generous. A good success. A little white pepper tingle to finish.

Domaine Jessiaume Auxey Duresses Red is best enjoyed with pasta, rich fish (salmon, tuna, etc.), shellfish, mild and soft cheeses, and cured meat.
